The base of the “Nutcracker” log is made of soft gingerbread and a crispy gingerbread layer that also combines sweetness and texture. A spiced poached pear insert adds a subtly enhanced fruity and fragrant note. The whole is enveloped in a creamy and delicate Les Dorures de Garraud honey mousse, which elegantly balances the whole.
